I attended the 2008 Pastry Scoop Spring Conference at the French Culinary Institute last May. It was great to reconnect with some people i met last year at this same event. Of course, the highlight of this conference was the class of Ron Ben-Israel ... and again it was awesome. His ideas on cake decorating are always so fresh and innovative. What i like about him is that he makes his own rules!

I guess i should do that too. After learning the basics and classic techniques, i should not be bound by these, but continue to create and innovate! Ron taught different techniques on doing ribbon and bows and i truly learned so much.
