I attended the 2008 Pastry Scoop Spring Conference at the French Culinary Institute last May. It was great to reconnect with some people i met last year at this same event. Of course, the highlight of this conference was the class of Ron Ben-Israel ... and again it was awesome. His ideas on cake decorating are always so fresh and innovative. What i like about him is that he makes his own rules! I guess i should do that too. After learning the basics and classic techniques, i should not be bound by these, but continue to create and innovate! Ron taught different techniques on doing ribbon and bows and i truly learned so much. posted by The Cake Artist @ 3:55 PM

I had initially signed on to the 2008 Pastry Scoop Conference because of Ron Ben-Israel's class but i was in for more great surprises as the day progressed. My second class was taught by Elisa Strauss of Confetti Cakes. Oh my goodness... the class was great, entertaining and full of information.... the woman is like the energizer bunny! She was full of enery and talent! She even mentioned that when she guested on the Martha Stewart show, Martha told her that she was too loud... and coming from Martha, you know that's not a good thing (everyone knows Ms. M never wants to be upstaged by anyone!). The third class was a really surprise treat for me. Meeting Dorie Greenspan was inspirational. She is another wonderful baker and cookbook author. When i approached her after the class, she was totally amazed when i told her i had come from the Philippines. Too bad, i wasn't able to buy Elisa and Dorie's books earlier.... the other participants lined up to get their autographs. I would have done that too.... its only when i meet baking "greats" that i get star-struck. Good To Be Home

![]() ![]() I'm back in Manila now and it's soooooooo good to be home. A month is too long to be away from family.... learned my lesson. Next time, hubby and dear daughter are coming with me wherever i go. It's Father's Day tomorrow and i thought i'd make some cake to cheer up some of our father friends. Here's what i made... a triple chocolate cake, iced with italian meringue butttercream, chocolate caramel ganache and hazelnut praline. OMGoodness.... hubby said the taste was fabulous.... i thought it was deliriously good too. Hope this inspires you to bake some soon... posted by The Cake Artist @ 7:16 PM
US / Canada trip... and a cake inspired by Japan

I will be seeing some of my dear clients in the US soon... Here is my schedule:
May 2-7 New York May 7-14 Chicago May 14-18 Victoria, Canada May 18-20 Seattle May 20-24 Las Vegas May 24-28 San Francisco Hopefully this trip will be one that is relaxing and restful... considering the many places we'll visit in a short time. Or you could still email me at thecakeartist@gmail.com ) I'm particularly excited to go to New York and visit Cendrillon .... the famous Filipino/Fusion restaurant of Chef Romy Dorotan. I recently saw him in one of the re-runs of Martha Stewart Living (aired on the Lifestyle Network), teaching Martha how to make pickled papaya or "atchara". Also... last year, i attended a short workshop by my cake idol Ron Ben-Israel.... so when i heard that he was doing another class this year, i could not pass up the chance and immediately enrolled for his 2-hour class! Yipee... i am super excited! The one-day conference is going to be held at the French Culinary Institute in New York. It has always been my dream to study there but could not fathom how to raise the $38k tuition.... so this short conference would do for now. I love travelling and meeting new friends and clients while i am abroad. I love exploring and experiencing the world... opening my eyes and mind to new inspirations for cake designs! Who can resist the P1 fare sales at Cebu Pacific? Well i can't... it's a chance to explore different places for just a few bucks. Here are some photos of our family from a recent trip to Jakarta, Bali and Yogyakarta. Bali is rich in culture and arts... their traditional batik designs would be great on an Asian style cake, don't you think?
